Source: Puncheons and Flagons. recipe type The Low Lantern, serves 2, diet Contains meat Ingredients Roughly cracked or small ice cubes 1 ounce coffee liqueur 8 ounces ginger beer 1 ounce fresh lime juice 2 lime wheels, for garnish 2 slices ginger, for garnish Instructions To make the miso-washed rum: In a small saucepan over medium heat, melt the butter for about 5 minutes, stirring frequently until aromatic and slightly browned. Remove from the heat and stir in the miso paste until fully combined. Add the rum and allow to cool. Then transfer to a jar and shake well. Refrigerate until the butter is solidified, 1 to 2 hours. Line a fine-mesh strainer with cheesecloth or paper towel, set it over a cup with a spout, and strain the butter solids from the rum. Fill two highball glasses with ice. Divide the coffee liqueur evenly between the glasses. Slowly add half the ginger beer and lime juice to each glass. Carefully top each cocktail with half of the miso-washed rum. The finished drink should have three visible layers. Garnish with a lime wheel and a slice of ginger. Serve at once.
