Exploding Cheese Puffs

Source: Heroes' Feast: The Deck of Many Morsels. recipe type Recipe, diet Contains meat Ingredients 0.33 cup popcorn kernels 2 tablespoons extra-virgin olive oil or melted butter 0.25 cup finely grated Parmesan cheese (see Tip) Kosher salt and freshly and finely ground black pepper 3 tablespoons whole-grain sorghum Instructions Add the popcorn kernels to a medium-size paper bag, fold the top several times to seal it, and microwave on high until the popping has almost stopped, 3 to 4 minutes, taking care not to burn it near the end. Pour the popcorn into a very large bowl (reserve the bag). Add the oil and stir or toss to coat the popcorn thoroughly. Add the Parmesan cheese, ½ teaspoon salt, and 1 teaspoon black pepper and toss to combine. Adjust the seasoning as needed. Add the sorghum to the paper bag and microwave on high until the popping has almost stopped, 1 to 2 minutes, taking care not to burn it near the end. Sprinkle the popped sorghum over the popcorn and serve.
