Halfling Finger Sandwiches

Source: Heroes' Feast: The Deck of Many Morsels. recipe type Recipe, diet Contains meat Ingredients 0.75 cup whipped cream cheese (see Tips) 3 tablespoons minced fresh chives Kosher salt and freshly ground black pepper 8 slices hearty Pullman or high-quality white sandwich bread (see Tips) 16 to 20 thin slices English cucumber, peeled if desired 4 very thin slices sweet onion (such as Maui or Walla Walla) Instructions In a small bowl, mix the cream cheese, chives, and pinches of both salt and pepper until blended. Lightly toast the bread, if desired, and cool briefly. Spread about 1½ tablespoons of the cream cheese mixture on each slice of bread. On four of the slices, shingle four or five slices of cucumber; sprinkle very lightly with salt and pepper; add a slice of onion, breaking apart and slightly spreading the rings; and top each with another slice of bread, cream cheese side down. With a serrated knife, cut off the crusts, slice each sandwich into four triangles or squares, and serve.
