Cover, shake well, and store in a cool, dry place for at least 24 hours and up to 4 days, shaking and tasting daily to check on strength of the infusion. Once the gin has reached the desired flavor, strain the solids and return it to the jar. Store any remaining infused gin indefinitely. In a mixing glass, combine 4 ounces of the sage-infused gin and the vermouth. Add the ice and stir with a long-handled spoon until well chilled, about 30 seconds. Strain and divide the mixture evenly into martini or cocktail glasses. Top each with a sage leaf for garnish and serve at once.
