Source: Puncheons and Flagons. recipe type The Halfway Inn, serves 2, diet Vegetarian Ingredients 3 ounces blanco tequila 1.5 ounces white vermouth Roughly cracked or small ice cubes Large ice cubes 0.5 ounce fresh lemon juice 2 sprigs lavender, for garnish Lemon peel, for garnish Instructions To make the lavender syrup: In a small saucepan, combine the water and sugar. Bring to a boil over medium-high heat, add the lavender, and stir to combine. Remove from the heat and let steep for 5 minutes. Strain the mixture into a fine-mesh strainer or cheesecloth over a cup with a spout to remove the solids and set aside. In a separate cup, stir together the hot water and butterfly pea powder until no clumps remain. Add to the lavender syrup and mix well. Allow to fully cool before using. Store any remaining lavender syrup in an airtight jar in the refrigerator for up to 1 week. In a mixing glass, add the tequila, vermouth, and ½ ounce of lavender syrup. Fill the glass halfway with ice and stir with a long-handled spoon to chill, about 30 seconds. Add a large ice cube to two rocks glasses. Strain and divide the mixture evenly between the two glasses. Top with lemon juice, lavender sprigs, and lemon peel. Watch the color change with the addition of acid, and serve at once.
