Source: Puncheons and Flagons. recipe type The Halfway Inn, serves 2, diet Vegetarian Ingredients Roughly cracked or small ice cubes 4 ounces blanco tequila 1 ounce fresh lime juice 8 ounces sparkling mineral water 0.25 sheet nori, cut into 2 pieces on the bias Instructions To make the nori saline solution: In a small saucepan, bring the water and salt to a boil over medium-high heat and stir until the salt is completely dissolved. Remove from the heat. Add the nori pieces and stir to submerge. Allow to steep for 30 minutes to an hour. Strain the mixture into a fine-mesh strainer over a cup with a spout to remove the solids and set aside. Store any remaining saline in an airtight jar in the refrigerator for up to 1 month. Fill two highball glasses three-quarters full with ice. Divide the tequila, lime juice, and sparkling water evenly between the two glasses. Add ¼ teaspoon of the nori saline solution to each glass and gently stir to combine. Garnish with a triangle of nori and serve at once.
