Source: Heroes' Feast Flavors of the Multiverse. recipe type Lost in Realmspace, serves 4, diet Vegan Ingredients 1 pound flank steak, trimmed of fat 2 tablespoons Shaoxing rice wine or dry sherry 1 tablespoon soy sauce 2.5 teaspoons cornstarch 0.5 teaspoon granulated sugar 2 tablespoons low-sodium chicken broth or water 2 teaspoons unseasoned rice vinegar 2 teaspoons toasted sesame oil 3 tablespoons ketchup Kosher salt and freshly ground black pepper 1 tablespoon grated fresh ginger 1 tablespoon pressed or grated garlic 6 scallions, trimmed, white parts minced and green parts cut into ½-inch pieces 3 tablespoons neutral oil 1 pound plum tomatoes, cored, halved lengthwise, seeded, and halves cut lengthwise into thirds (see Cook's Note) 1 medium yellow onion, halved from pole to pole and sliced lengthwise Instructions Cut the flank steak against the grain into ½-inch-thick slices, each strip cut crosswise into thirds. In a medium bowl, combine 1 tablespoon of the rice wine, the soy sauce, 2 teaspoons of the cornstarch, and the sugar and whisk to blend. Add the beef, stir to coat, and let rest at room temperature for 15 to 30 minutes. In another small bowl, combine the ginger, garlic, scallion whites, and 2 teaspoons of the neutral oil; stir to mix; and set aside. In a large nonstick skillet over high heat, warm 1 tablespoon of the neutral oil until shimmering.
