Source: Puncheons and Flagons. recipe type One-Eyed Jax, serves 6-8, diet Vegetarian Ingredients 10 ounces fresh lemon juice (approximately 5 lemons) 1 lemon, sliced into ¼-inch wheels 1.5 cups ouzo or other anise spirit Roughly cracked or small ice cubes 4 cups club soda or sparkling water Lavender sprigs, for garnish Instructions To make the lavender syrup: In a small saucepan, combine the water and sugar. Bring to a boil over medium-high heat. Add the lavender and stir to combine. Remove from the heat and let steep for 5 minutes. Set a fine-mesh strainer or cheesecloth over a heatproof container and pour the syrup through to remove the solids. Let cool completely before using. In a large pitcher, combine the lemon juice, lemon slices, all of the lavender syrup, and ouzo. Fill the pitcher halfway with ice and, using a long-handled spoon, stir for 30 seconds until chilled. Add the club soda and stir gently. Fill as many highball glasses as needed with ice. Garnish with lavender sprigs and serve at once.
