Source: Puncheons and Flagons. recipe type The Moonstone Mask, serves 2, diet Vegetarian Ingredients 2 teaspoons sugar 6 dashes bitters 2 ounces Fino sherry 8 ounces sparkling wine, chilled Pink tuile cookies, for garnish (optional) Instructions In each of two flute glasses, combine 1 teaspoon of sugar, 3 dashes of bitters, and 1 ounce of sherry. Using a long-handled spoon, stir until the sugar has dissolved (see Cook's Note). Add 4 ounces of sparkling wine to each glass. Gently stir to combine. Garnish with a cookie and serve at once.
